Hi Irene and Nancy,
Welcome and thanks for the comments.I'm sure Uncle Lester would of loved the bread he knew is rye! The recipe is sort of technical if you haven't used sourdough or your not accustomed to bakers percent, but it's really worth putting in the effort to learn. This bread is a keeper!

Thanks,
Jeremy

Irene

I love this story. What beautiful memories of your uncle! I love, love rye bread, and though I'm only at the beginning of my experimentation with yeast, I'm really looking forward to making my first loaf of rye.

Nancy (n.o.e.)

Aww, love the picture of your uncle Lester. What a sweet post; and what a fantastic loaf of rye! I grew up in Westchester and there's nothing like toasted Jewish rye with butter. Nothing. btw, my parents lived in Fairfield for many years, and I just baked a loaf from the Hay Day cookbook this evening.

Susan/Wild Yeast

A gorgeous loaf, and Lester looks really happy about it.
