Nils, I went and bought a thermometer the other day, and I will use sheets to monitor my bakes, going to get serious..maybe tomorrow?

The bread looks great and imposing. Rustic, crusty, good. I'm trying out another rule: Watch dough temperatures. Have you tried to monitor temps in a dough or do you just 'have it'? I did today and it totally ruined rule 6.

I had to smile when reading 3. My "mise-en-place" or get-ready being somewhat lazy, pulling bags of flour open one-handedly while mixing dough with he other hand...
