Khobz, flavored with zaatar, is a delicious Lebanese flat-bread. It also features a spice mix of sumac, wild thyme and sesame seeds. Simple to make, Khobz is delicious on a mezze. Since finding zaatar at my local Lebanese falafel store in Queens, I have been making these for years.
Khobz, (also known as manoushe), can be used for various pizza styled bread, or pies. For the batch below, I used a formula converted with sourdough and a touch of yeast. Made fresh, it can be quickly prepared, but I like to keep it in my fridge for a longer ferment to make the dough more extensible and tastier.
