My Turkish friend Dilara is living in New York. We have been collaborating on food, speaking food, and enjoying food together. As always her whirlwind dervish dinners are chaotic events, but always tasty. Inviting her for dinner, I decided to make a borek. It's a typical yufka (Turkish phyllo), that is filled with meat, vegetables or dairy or a combination. Basically a savory pie, so I played with her concept and my own whimsy. This borek I used beet tops, feta, dill, egg, cream and yes, bacon! Sort of a quiche meets Istanbul.

Wow, Jeremy, that looks good!
I love the Turkish cuisine, and in Germany you find many Turkish cafes, restaurants and shop. I would trade their take-out food anytime for hamburgers or hot dogs.
I just ordered a Turkish cookbook from the German amazon (not available in English).
Güle, güle,
