My Turkish friend Dilara is living in New York. We have been collaborating on food, speaking food, and enjoying food together. As always her whirlwind dervish dinners are chaotic events, but always tasty. Inviting her for dinner, I decided to make a borek. It's a typical yufka (Turkish phyllo), that is filled with meat, vegetables or dairy or a combination. Basically a savory pie, so I played with her concept and my own whimsy. This borek I used beet tops, feta, dill, egg, cream and yes, bacon! Sort of a quiche meets Istanbul.
