If you're ever in Honolulu, head to Leonards, a popular bakery in that Hawaiian city. There you'll find a favorite known as Malasadas, doughnuts that came to the South Pacific along with Portuguese plantation workers from Madeira. The literal translation of Malasadas is "undercooked." Using various formulas found online, I have had five attempts to bake them at home. My experience attests to the name. They are difficult to get just right - as "undercooking is more difficult than it sounds. Below are photos of my last batch. Though not quite perfect, I think I'm getting the idea.
