As baseball legend Yogi Berra once put it, “it’s déjavu all over again!” More precisely, once more a happy mid-bake afternoon at home is interrupted by a knock on the door. It’s the building super. “Sorry, but you gotta turn off your stove. Gas line trouble.”  With three doughs already mixed, initially I stuck the pain de miche in my fridge. But then thinking of all my heros, rejecting any retreat, I cranked on my appliance oven and rolled the dice. At first, the results looked a bit charred, slashed and opened up. But after cutting open the loaf, happiness and good flavor emerged.
