Rina Poletti Teaches The Art Of Hand Made Pasta

by | Oct 26, 2017 | Food, Pasta

Last weekend I ventured down to Charlottesville, Virginia, an area in the news recently and near where my cooking career began years ago while serving in the U.S. Army. My trip had nothing to do with politics or military nostalgia. It was for a workshop in hand-rolling pasta. Hosted by my friend Sharlene Mendoza McNeish, owner of Charlottsville Levain Baking Studio, she brought in "La Signora Taglietella Rina Poletti" to teach this one-day course. Quite simply, the trip was delicious, learning to make treats from southern Europe amid the northern edge of the American south, highlighted by learning with Emilia Romagna's Regina di sfoglia! Below are shots of what we did and tasted.
