Ezekiel Bread

“Take thou also unto thee wheat, and barley, and beans, and lentiles,
and millet, and fitches, and put them in one vessel, and make thee bread
thereof, according to the number of the days that thou shalt lie upon
thy side, three hundred and ninety days shalt thou eat thereof.”

Ezekiel 4:9

So there I was online, Googling  this ancient prophet and try to figure out why his name would be placed on bags in health food stores for a hefty priced loaf of sprouted hippy bread? Then I decided to follow Keith Giusto’s “power” bread,” adapted from MC Farine, using it to make this loaf. Along with spelt, I decided to throw in some garbanzo’s, millet and lentil. I’ve seen weird “Ezekiel” mixes with black beans, soy and the run of the mill “granola eating, Birkenstock tree hugger” stuff in it. I wanted something Ezekiel could find in Babylon while prophesizing! My levain, (no commercial yeast here) was a build of spelt and kamut, ancient cousins of wheat and I threw in some carob molasses in place of malt. Damned (excuse me Ezekial), I missed the fitches!
