Starters-Backferment

For a while now I’ve been perpetuating a backferment sponge, which from what I gather isn’t a typical method of using this product, but I go against the grain so to speak. So far I’ve had great success though the mystery ingredients of peas, corn and honey in this product still seem “new age”, all the same I have to say give a nice push and flavor profile to bread. So when I run out of the grains I have left, I guess I’ll just keep feeding this beast!
