If you find yourself without any bread, as I did recently and don't have time to wait for a dough to rise, try socca, a chickpea batter made of water, olive oil salt and pepper. It's poured and baked in a pre-heated pan in the oven. It also takes less time to bake than it takes for bread. This French street food delicacy from Niçe is simple, light and flavorful. Good alone, but also a perfect accompaniment with wine and food.
