Lately I’ve had a spate of lousy breads coming out of my kitchen. As usual, I’m going to blame it on time – or lack of it! More specifically, it’s my failure to regularly feed my starter. 

Meanwhile, I went through some notes from other bakers and came upon an inspiring formula  from Ian Lowe’s now defunct blog, Ars Pistorica. Despite having limits on time, I followed it to my best precision. Boom!  Out came this lovely loaf. Point being? However crunched you are for time, stay at it. Sourdough takes more than “time,” it takes attention, practice, and learning to work around the ticking of the clock.
